Indian penne pasta

4 servings

  • 40 dkg pasta
  • 4 cloves garlic
  • 1 red onion
  • 1 tsp cumin
  • 1 tsp garam masala spice mix
  • 15 dkg green peas
  • 15 dkg carrots
  • 1 box of canned peeled tomatoes (40 dkg)
  • 2 dl coconut cream
  • Ground chili to taste
  • 1 teaspoon olive oil
  • Salt
  • Freshly ground pepper
  • 1 bunch of fresh coriander

Heat the oil in a large, deep pan. Toss in the chopped garlic and red onion and sprinkle it with cumin and the garam masala spice mix. Add chili and freshly ground pepper while stirring until it starts to smell. Add the fresh or frozen green peas and the chopped carrots and roast for a few minutes. Then add the peeled tomatoes, stir and cook under a lid at medium heat. Meanwhile, cook the pasta and drain it. Pour the coconut cream into the pan , add the pasta and mix it thoroughly. Serve it with chopped coriander.

Broccoli-salmon penne pasta

4 servings

  • 40 dkg penne pasta
  • 30 dkg broccoli
  • 40 dkg salmon
  • 20 dkg green beans
  • 8 dkg sliced, roasted almonds
  • 2 dl cooking cream (can be vegetable cream)
  • 1 onion
  • 4 cloves garlic
  • 1 teaspoon olive oil or butter
  • ½ lemon juice
  • Salt
  • Freshly ground pepper mix

Cut the broccoli and green beans into small pieces. Place them in boiling water and blanch for a few minutes, then cool in ice-cold water, drain, set aside. Chop the onion and garlic. Cut the salmon into 2×2 inch cubes. Put the olive oil/ butter into a hot pan, toss in the onions, stir them for a few minutes. Add the salmon, sprinkle it with salt and pepper. Roast it for 5 minutes, then pour it over with the cream. Season it with the lemon juice. Stir in the cooked pasta and vegetables and serve it with the roasted almond slices.
