Roasted bell peppers

Ingredients:

  • maria’s breadcrumbs
  • minced garlic
  • bell peppers
  • goat cheese
  • rosemary
  • sea salt

Preparation:
Saute garlic in olive oil until golden brown. Add breadcrumbs and sea salt, stirr constantly until toasted, 6-8 minutes. Set aside to cool down. Halve the peppers, remove the seeds and lightly coat with olive oil and salt. Place them on a baking sheet cut-side down. Bake in a pre-heated oven at 200°C for about 30 minutes until lightly charred on all sides. Once cool enough to handle, fill each of the pepper halves with some goat cheese, then sprinkle with the breadcrumbs and a pinch of coarse salt. Finish of with rosemary herbs.
